Edible Insight was originally the brainchild of two friends, Kim and Rachel. Both native New Yorkers with undergraduate degrees in the visual arts and secondary certifications in holistic healing and bodywork (yoga and massage therapy). The two met while on their birthright trip to Israel and serendipitously found themselves attuned to each other’s holistic interests. As they journeyed through a new country, exploring the local cuisine, meditating and vinyasa flowing from start to finish, a wave of creativity was kick started. Seeking to incorporate all of their shared interests (art, bodywork, nutrition, cooking, etc.) into one flowing medium and to never box-in their potential, Edible Insight was created and is maintained by Rachel as an outlet for musings and projects alike.
